Greenock Creek Cabernet Sauvignon is made from the winery's Radford Road Home Block at Seppeltsfield in the Barossa Valley, just outside the cellar door.
The fruit is handpicked and destemmed but not crushed. It ferments in shallow open fermenters with several pump overs. It is then drained and basket pressed, keeping the free run and pressings separate.
The wine is racked to shaved out, seasoned hogsheads for natural malolactic fermentation. It matures for 27 months and is blended one week prior to bottling.
Dark garnet, Greenock Creek Cabernet Sauvignon has lithe berry flavours, spicy oak and dusty tannins. Cellaring potential is seven years.
